Fresh Fridays: Carrot Muffins

Simply Organic Carrot Cake
1 package Simply Organic Carrot Cake Mix
1 cup shredded carrots
2  large eggs

Follow directions on box to prepare carrot cake, including preheating the oven to 350 degrees. Grease muffin pan and pour mix evenly into slots. Bake for 30 to 35 minutes, or until centers test done.
Chef Suggestions
Frost with cream cheese frosting, if you like.
